Dawa dawa Seeds

The seeds of Dawa Dawa, Soumbala (Mali, Guinea) or Nététou (Senegal and The Gambia) is a spice that is used in West-Africa. It is made from the seeds of the Néré tree that grows in the Sahel. The seeds are rich in fatty acids, proteins and carbohydrates.

Similar to carob, the seeds within the pods are cleaned, cooked and fermented. They have a pungent aroma and flavor.

In Africa, Dawa Dawa is often used as seasoning in dishes. See for example our recipes for Chicken Mafé from Senegal or Soupi Kanja from Senegal.

Dawa dawa is made from the seeds of Parkia biglobosa, otherwise known as the African Locust Bean Tree. This is a deciduous perennial that grows to between 7 and 20 meters high. Each pod is 30-40 centimeters long and contains up to 30 seeds.
