Chayote Stew from Madagascar

Chayotte Ragout uit Madagascar


(The ingredients in bold are available in the webshop.)

For 4 persons:


  1. Leave the chayotes to soak in cold water for 10 minutes and then peel them.
  2. Boil them in salted water during 30 minutes.
  3. Cut them in cubes of around 2 centimetres. Set aside.
  4. Peel the onions and chop them. Set aside. Crush the garlic and ginger together.
  5. Saute the onions in a bit of oil for around 3 minutes.
  6. Add the garlic and ginger, the combava zest, the voatsiperifery pepper and the turmeric.
  7. Cut the tomatoes in cubes and add them to the onions. Mix together.
  8. Let everything bake for another 3 minutes.
  9. Add the chayotes and 10 cl water. Stir well.
  10. Leave to simmer for another 5 minutes.
